6 oz sweet Italian sausage, casings removed
1/3 lb cooked rigatoni
2 oz pasta cooking water
1 C baby spinach
3 T goat cheese, lightly crumbled
1 T parmesan cheese, crumbled
1 T parsley, chopped
8 cherry tomatoes, garnish

Directions:
Directions:
Place a large deep skillet on high heat and add the sausage and break up the sausage with a fork.

Add cooked rigatoni, pasta cooking liquid and spinach.

Cook over moderate heat, tossing the pasta around with a wooden spoon and wilt the spinach leaves.

Remove the skillet from the stove, add goat cheese, parmesan, parsley and cherry tomatoes.
Combine and place in serving bowls
