2 pkgs (10 oz) frozen chopped broccoli
3 cups shredded cheddar
2/3 cup chopped onion
1 1/3 cup milk
3 eggs
3/4 cup buttermilk baking mix
3/4 tsp salt
1/4 tsp pepper

Directions:
Directions:
Heat oven to 400º. Grease pie plate. Rinse broc under cold water and drain thoroughly. Mix broc, 2 cups cheese and onion in plate. Beat milk, eggs, biscuit mix, salt & pepper - about one minute with a hand mixer. Bake 25-35 minutes until knife comes out clean. Top with remaining cheese - bake until melted.

For a lower cal version, I use 3/4 cup of cheese and just sprinkle a little on top.

For variation, I also substitute ham or spinach instead of broccoli. Use the same amount of spinach and 1-2 cups chopped ham.
