1 thin, long sourdough baguette, preferably 1 day old
2 tablespoons freshly ground ginger
2 tablespoons freshly minced garlic
1/4 cup toasted sesame seeds
1 pound uncooked cocktail shrimp, peeled and deveined
1/2 cup unseasoned bread crumbs
2 large eggs
1 teaspoon soy sauce
peanut oil for frying

Slice baguette into 1/2-inch-thick slices. In a food processor fitted with a steel blade, process the ginger, garlic, and sesame just to combine. Pulse in the shrimp until chopped. Next pulse in the bread crumbs, eggs, and soy sauce until mixture resembles a coarse paste.

Using a tablespoon, mound a generous portion of the mixture onto slices of sourdough baguette, pressing down to secure the topping.

Heat 1/4-inch-deep layer of oil in large, heavy, non-stick saute pan over medium-high heat. Brown about 3 minutes on both sides, starting bread side up. Drain on paper towels and keep warm until all toasts are cooked, adding more oil if needed.
