Southwest Potato Salad Recipe

2-3 lbs boiling potaotes
1+ c prepared mayonnaise
1 ancho chile canned in adobe sauce
3 T fresh lime juice
1 clove garlic - minced
1/2 small red onion finely sliced
1/2 small jalepeno pepper, finely minced
1/2 t cayenne pepper
2-3 T fresh cilantro, chopped
salt & pepper to taste

Peel or scrub potatoes and cut into 2 inch pieces. Boil in salted water until just done when pierced with a knife; do not over cook. Drain potatoes and cool to room temperature. Set aside.

Using a food processor prepare salad dressing adding the next 6 ingredients, mayonnaise through cayenne pepper. (Note: ingredients can be prepared and blended in a bowl w/o a food processor if all solid ingredients are finely chopped/minced). Blend until smooth. If dressing is too thick, add a bit more lime juice.

Transfer potatoes to a large bowl; add salad dressing and toss to coat thoroughly. Add chopped cilantro; salt & pepper to taste.

The heat in this potato salad can be managed through the amount of jalepeno pepper and/or the cayenne pepper. Do not eliminate the ancho chile as it provides the unique smokey flavor.
