4 cups cooked chicken, cut up
4 cups celery chopped
2 tsps. salt (I use 1 teaspoon)
cup grated onion
1 tbsp. lemon juice
2 cups mayonnaise
cup extra dry vermouth
1 small jar chopped pimento
1 cup blanched sliced almonds
1 cup crushed potato chips
cup parmesan cheese

Directions:

Thoroughly combine chicken, celery, salt, onion, lemon juice, mayonnaise, vermouth and almonds. Allow to stand at least one hour and taste. Add more salt if needed. Scoop into a buttered oblong casserole dish; sprinkle with chips. Then sprinkle with cheese. Bake at 350 for 25 to 30 minutes.
