3 C thinly sliced potatoes
1 C thinly sliced carrots
1/4 C sliced green onion
1 T margarine or butter
1/4 tsp caraway seed
2 slices crumbled, crisp-cooked bacon
1/2 C shredded Monterey jack cheese

Directions:
Directions:
To Grill: In 18 inch square of tin foil, layer potatoes, carrots, and green onion. Sprinkle with salt and pepper. Dot with margarine. Sprinkle with caraway seed. Seal tightly with another piece of foil on top. Grill in covered or uncovered grill directly over medium-hot coals about 20 min. Can turn once during grilling. Carefully open package. Sprinkle with bacon and cheese. Close package. grill 2 min longer, till cheese melts.
