1 lb fresh or frozen fish fillets 1/2 to 1 inch thick
1 beaten egg
2/3 C potato chips or saltine crackers

Directions:
Directions:
Thaw fish, if frozen. Measure thickness of fish. Cut into serving size portions. Pat dry. In a shallow dish combine egg 2 T water. In another dish mix crushed potato chips and a dash of salt and pepper. Dip fish into egg mixture and then coat them with potato chips. Fry the fish in hot oil on one side until golden (usually 4-6 min). Turn and cook on the other side. Drain on paper towels. Keep warm in 300º oven while frying remaining fish.
