3 eggs
1 1/2 c. sugar
2/3 c. oil
1 tsp. vanilla
1 c. oatmeal
2 1/4 c. white flour
1/4 c. brown flour
1 tbsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
1/4 c. milk powder
2 c. unpeeled, raw, grated zucchini
2/3 c. chopped walnuts (optional)

Directions:
Directions:
Combine eggs and sugar. Add oil and vanilla and mix well.
Combine separately the dry ingredients and then mix into liquids ingredients. Add zucchini and nuts. Pour into 2 greased and floured loaf pans. Bake at 350 for 1 hour.

NOTE: Grated carrots can be combined with zucchini to bring it to 2 cups.
