1/3 c. sugar
Pinch of salt
1 tbsp. cornstarch
1 1/4 c. boiling water
1 tsp. grated lemon rind
1/4 c. lemon juice
2 tbsp. butter

Directions:
Directions:
In a saucepan, mix together the sugar, salt and cornstarch. Stir in the boiling water, then begin to cook on medium heat. Add the rind and pulp if desired for extra zest and texture. Add the lemon juice and cook until sauce is thick and bubbly, about 2 minutes. Remove from heat; stir in butter.
