1 pastry shell, unbaked
1 6 oz. can crabmeat
1/4 onion, chopped
1 1/2 celery stalks, chopped
1/2 cup cheddar cheese, grated
3 tbsp. Parmesan cheese, grated
3 eggs, beaten
2 tbsp. flour
1 1/4 cups half & half
1/2 tsp. Worcestershire sauce
1 tsp. lemon juice
Hollandaise sauce

Directions:

Combine crabmeat, onion, celery and put in pastry shell. Sprinkle with cheeses. Combine the rest of the ingredients in a bowl and mix well. Pour into quiche. Bake 15 minutes at 425 degrees, then 20 minutes at 350 degrees. Serve with Hollandaise sauce.

I have made this quiche and California quiche for large groups. Put vegetables or crab ingredients with cheese in shell, then use the same egg mixture and pour over. Good with Hollandaise sauce
