1 flank steak
1/2 onion
1 onion, sliced
2 T EVOO
1 each red, yellow and green bell peppers, sliced
2 T Mojo, or to taste
Rice
Cilantro, chopped
Wedges of Key Lime.....a lot of them!

Directions:
Directions:
In a large pot, place flank steak in water with 1/2 onion. Cook 3 - 4 hours until very tender. Cool for 20 minutes or until cool enough to handle and shred.

Pour EVOO into a skillet. Heat to hot. Place shredded meat in pan for 2 minutes ...MAX.

Immediately add peppers and onion. Cook until vegetables are al dente. Add 2 T Mojo.

Serve with rice. Garnish with chopped cilantro and lime wedges to squeeze on meat.

Mojo sauce is readily available in the grocery store.
