1 c. heavy cream
1/3 c. confectioner's sugar
1 tsp. pure vanilla extract
1 egg white
2/3 c. chopped macadamia nuts, divided

Directions:
Directions:
Place paper cupcake liners in 8 cupcake pans. In a chilled bowl with a chilled beater blades, whip egg white with sugar and vanilla until soft peaks form. Fold into cream along with 1/3 c. of macadamia nuts. Spoon into cupcakes liners; sprinkle with remaining macadamia nuts. Freeze until firm.
