1/4 cup olive oil
1 cup chopped onion
1 tbsp. chopped garlic
4 cups chicken broth
1 tsp.black pepper
1 tbsp. dried basil
1 tbsp. lemon juice
2 cups diced tomatoes, fresh or canned
2 cups cooked white beans;great Northern, navy or cannellini
2 cups cooked, chopped chicken breast
1 cup coursely chopped spinach

Directions:
Directions:
In a large pan over medium heat, saute onions and garlic in olive oil.
Add chicken broth, black pepper, dried basil and lemon juice.cover pan and let mixture simmer for a few minutes.
Remove lid and add tomatoes, white beans, chicken and spinach. Let simmer until cooked and ingredients are heated through and spinach is wilted.
