1 C sugar
3 T flour
3 T butter
1 t grated lime zest
1 C milk
2 eggs, separated
3 T lime juice

Directions:
Directions:
Combine sugar, flour and butter in a bowl.

Add the beaten egg yolks, lime juice, grated lime zest and milk.

Beat egg whites until stiff
Fold into yolk mixture

Pour batter into 1 qt mold or 6 ramekins.
Place in pan of hot water and bake 1 hour in slow oven (325F) or until pudding leaves the sides of the baking dish.
35 minutes for ramekins

Garnish with whipped cream and some lime zest.
