6 large potatoes
1/2 lb. sliced bacon
1 1/2 tsp. salt
3/8 tsp. garlic powder
3/8 tsp. pepper
3/8 tsp. paprika
2 tbsp. finely chopped parsley
1 c. thinly sliced scallions, include some of green tops
1 c. finely chopped celery
2 cups (10oz.) grated Gruyere cheese
6 tbsp. butter
1/3 c. milk
1/3 c. heavy cream

Peel potatoes & slice 1/8 inch thick bout 6 cups, cover in ice water. Fry bacon until crisp, drain and crumble. Grease 2 1/2 quart shallow casserole and layer with about 2 cups of potatoes. Sprinkle evenly with 1/2 tsp. salt, 1/8 tsp. pepper, 1/8 tsp. garlic powder, 1/8 tsp. paprika, 1 tbsp. parsley, 1/2 of the crumbled bacon, 1/2 c. celery and 1 c. Gruyere and dot with 2 tbsp. butter. Add another layer of potatoes and repeat salt etc. and dot with remaining butter. Mix milk and cream, pour into casserole. Bake at 400º for 30 minutes then lower oven temp to 350º and cook for additional 20-30 minutes or until potatoes are cooked or golden. Let stand for 10 - 15 minutes before serving.
