6 oz. Kielbasa (or Italian Sausage — or Turkey Sausage)
1 Large Onion (chopped)
1 Large Clove Garlic (chopped)
1 Tablespoon Olive Oil
1 Pound Fresh Kale
2 Cans (13 oz. Each) Chicken Broth
4 cups Water
2 sliced Carrots
1 teaspoon dried leaf MARJORAM
1/2 teaspoon SALT (or to taste)
1/8 teaspoon PEPPER (or to taste)
1/2 cup UN-COOKED Long Grain White Rice

Directions:
Directions:
In large pot, Saute MEAT, ONION and GARLIC in Olive Oil until tender (about 10 minutes).

Add to pot, Chicken Broth, Water, Carrots, Marjoram, Salt, Pepper and fresh Kale stems.

If not using fresh stems add the leaves here.

Bring to Boil. Cover. Lower Heat. Cook for 15 minutes.
Remove cover. Add Rice and Kale to pot.

Bring to Boil. Cover. Lower Heat. Cook for another 15
minutes (or until Rice is tender).

You can substitute beef kielbasa. I use the turkey to keep it low fat. You can also use any type of rice.
