2/3 c pumpkin
3 eggs
1 c sugar
1 tsp lemon juice
3/4 c flour
1 tsp baking powder
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/2 tsp salt
1/4 c chopped nuts
6 oz cream cheese
4 T oleo
1 c powder sugar
1/2 tsp vanilla

Directions:
Directions:
Beat eggs for 5 minutes in mixer; gradually add sugar, keep beating. Then add pumpkin and lemon juice, and fold into dry ingredients. Line a jelly roll pan with wax paper, spread batter, sprinkle with nuts and bake for 15 min. at 375º. Turn out onto a towel dusted with powder sugar. Flip the batter onto the towel, peel off the wax paper. While still warm, roll it up and let it cool. When cooled, unroll, spread with filling and roll it back up again. Refrigerate.
To prepare the filling:
Cream 6 oz cream cheese, 4 T butter, 1 c powder sugar and 1/2 tsp vanilla. Beat until smooth, then spread on roll.
