1 cup oil
1-1/2 cup sugar
3 eggs
2 cups peeled and grated zucchini
3 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon baking powder
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon nutmeg
3 teaspoon vanilla
1 cups chopped nuts

Directions:
Directions:
Preheat oven to 350º. Cream sugar and oil together; add eggs and mix well. Add zucchini and mix again. Add dry ingredients to egg mixture and stir well. Add nuts. Lightly grease and flour two loaf pans. Pour batter evenly into pan and bake at 350º. Bake for 1 hour. Remove from pans and cool on wire racks.
