Approximately 10 salmons
5 gal water
5 lb table salt
2 lb dark brown sugar
1/2 tsp Allspice

Directions:
Directions:
Cut Salmon into 2 by 3 inch pieces.

Mix 5 gallons of water with the 5 lbs of table salt. Stir well. It is the right amount with you put a raw potato in the mixture and it floats.

Add the brown sugar and allspice. Put the fish in the brine for 4 hours.

Stir often.

Strain fish and layout on towels overnite. Then put the fish on a rack and smoke until done. Approximately 8 to 10 hours.

We cold smoke it with skinned alder wood.
