1/2 cup Sugar
1/2 cup Water
1/2 cup Fresh Lime Juice
10-15 Fresh Bsial Leaves - Chopped coarsely
1 Sprig of fresh basil for each serving

Simple Syrup:
Dissolve sugar in water, bring to a boil, lower heat, simmer for 5 minutes; remove from heat, cool.

Pour lime juice and simple syrup into a blender or food processor. Add chopped basil leaves and blend well. Transfer blended mixture to a shallow pan, coverr and freeze until firm.

Transfer frozen mixture to a blender or food processor again and blend well. Freeze again in a shallow pan. When ready to serve, use a melon baller and place 3 scoops in a stemmed glass, garnish with a sprig of fresh basil and serve.

This can also be served between courses as a pallette cleanser!!!! Use a heaping tablespoon to cleanse pallette.
