Para 1 Kg. de chucrut:
2 cebollas rosadas grandes picaditas
3 a 5 pimienta de chapa enteras (allspice)
6 granos pimienta entera
3 hojas grandes de laurel
1 manzana grande de las que no se deshacen (delicia)
azúcar al gusto al final
1 cebolla mediana chica cortada en cuadrados de un dedo de ancho
agua poquito más de la mitad del volumen del chucrut

Directions:
(Comprar el chucrut en salchichería Zimmerman). Si estuviese muy salado enjuagarlo apenas por partes sobre un colador en agua fría para no quitarle el ácido y exprimirlo un poco.

Freír la cebolla picadita en un poco de aceite. Echarle el chucrut y todos los ingredientes restantes menos el azúcar.

Cuando ya esté cocido, no recocido, rallarle encima una papa grande cruda en el rallador finito con toda su agua para que ligue. Al final agregarle 1 cucharada de azúcar o al gusto.
