Salad:
2 avocados diced, barely ripe
one head boston lettuce
1/4 cup FINELY grated parmesan
shaved parmesan
1 small shallot, sliced

Dressing:
4 limes, squeezed
tbsp. red wine vinegar
pinch dried tarragon
salt
pepper

Directions:
Directions:
Tear lettuce after washing. Add avocado, shallots, and finely grated parmesan cheese.

Whisk together ingredients for dressing and pour a small amount over the top of the salad. Mix salad and add extra dressing if necessary.

Finally, place shaved parmesan on top when serving.
