Creamy Baked-Stuffed Potatoes Recipe

4 large baking potatoes
8 slices of bacon
1/2 c chopped green onion
1/4 c Parmesan cheese
1 c sour cream
1 t salt
1/2 t pepper
1/2 t paprika

Directions:
Directions:
Bake potatoes at 400 for 1 to 1 1/4 hours. Allow the potatoes to cool to the touch. Slice skin away from top of each potatoe. Carefully scoop out the pulp, leaving shells intact. Mash the pulp. Cook bacon until crisp. Drain and crumble the bacon, reserving 3 T drippings in the skillet. Saute the onions in the bacon drippings. Combine all the other ingredients except the paprika and stuff the shells. Top with the paprika. Bake at 350 for 15 to 20 minutes.
