2 chicken breasts, cut into pieces (or canned chicken can be used)
1 1/2 cup rice (uncooked)
1 can tomato sauce
1 can Rotel tomatoes
1 onion, chopped
2 ribs celery, chopped
1 bell pepper, chopped
1-2 cloves garlic, chopped
2 cups water
Season to taste

Directions:
Heat oil over medium heat. Add uncooked rice. Stir rice in hot oil and cook until rice turns golden brown. Add onion, celery and bell pepper and saute until vegetables begin to wilt. Add garlic. Add Rotel tomatoes, tomato sauce and water. Add chicken and continue to cook until rice is cooked. Stir occasionally and add additional liquid if necessary to completely cook rice.
