3 to 4 tbsp olive oil 3/4 tsp red pepper flakes 1 tbsp chopped garlic 1 medium chopped yellow onion 2 tbsp peeled and minced fresh ginger 1 pound ground chicken breast 1/2 c chopped mushrooms 1/2 c chopped zucchini 1/3 c chopped red pepper 1/3 c chopped green pepper 1 c canned ground peeled tomatoes (Muir Glen Organic or 6 in 1) 2 1/2 cups chicken stock 1/4 c chopped cilantro 1/4 c thinly sliced green onions 2 tsp sugar (optional)
