"I have long believed that good food, good eating is all about risk. Whether we're talking about unpasteurized Stilton, raw oysters or working for organized crime 'associates,' food, for me, has always been an adventure."--Anthony Bourdain

Ingredients:
1 Acorn squash
1/3 c. cracker crumbs
1/4 c. chopped nuts (I use Walnuts)
1/4 c. margarine or butter, melted
1 1/2 T. brown sugar
1/4 tsp. salt
1/8 tsp. nutmeg

Directions:
Directions:
1. Crush crackers into crumbs (I use a sealed baggie and the bottom of a measuring cup to crush). Melt butter and chop nuts. Mix all ingredients well.
2. Poke fork into squash a couple of times and microwave for 5 minutes. When squash is softened, cut in half and scoop out middle; discard.
3. Add filling to each side. Put filled squash in a pan with water covering the bottom. Cover with saran wrap and microwave 5-10 minutes per squash.

Personal Notes:
Personal Notes:
I usually use a little less of the brown sugar.
