3 T. butter
3 large eggs
3/4 c. milk
1/2 tsp. vanilla
1/2 c. flour
2 T. sugar
1/8 tsp. salt

Melt butter in a 10 to 12 inch oven-proof skillet over low heat (if skillet handle is not oven-proof it can be wrapped in foil). Remove skillet from heat. In a large bowl beat eggs until light and fluffy with a hand mixer (or place in blender). Beat in milk, vanilla, flour, sugar and salt. Pour batter into the skillet. Place skillet into the oven and bake at 425 degrees for 15 to 20 minutes, or until puffed and lightly browned. Slice into wedges to serve. Best served with fresh fruit and powdered sugar or syrup.
