1/2 CUP OF SLICED ONIONS
1 CAN TOMATO PASTE
1/2 TSPN OF RED OR BLACK PEPPER,NUTMEG
1/3 CUP OF OLIVE OIL,11/2 CUP CHICHEN BROTH, SALT TO TASTE

HEAT OIL IN A MEDIUM SAUCEPAN
ADD ONIONS AND PEPPER SIMMER UNTIL TENDER
ADD TOMATO PASTE AND BROTH
BRING TO BOIL
ADD CHICKEN, SALT AND NUTMEG
ADD RICE STIR AND COVER. COOK FOR 35MINS. STIR PERIODICALLY
