2 & 1/2 TO 3 pound frying chicken, cut into serving pieces
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon paprika
1 teaspoon sage
vegetable oil

Directions:
Directions:
1. Rinse chicken and pat dry. Combine flour with remaining dry ingredients. Place flour, salt and pepper
into brown paper bag or plastic and toss chicken pieces in a few at a time until well coated with the flour mixture.
2. In a skillet, heat oil to 1/4 inch depth. Let oil get hot that when you shake a little cold water from you fingertips the oil sizzles.
4. Add coated chicken, do not crowd and cook until golden brown.
5. Serve while hot.
