6 - 8 red potatoes, boil in jackets until tender, peel and dice
1 large sweet onion, (Vidalia, Texas), peel and dice
3 eggs, boiled, peel and dice
1 cup sugar
1/2 cup cider vinegar
6-8 slices of bacon, dice and fry
3 T. flour (all-purpose)
Salt/pepper to taste

In large skillet (I use cast iron) dice and fry the bacon until tender, remove bacon to paper towel and let drain. Reserve 2 T. of bacon drippings to saute the onions until tender; add sugar, flour and vinegar, cook until sugar has dissolved and sauce has thickened. You can check tastes at this point, if to "vinegary", add a few T. of sugar until you feel it is okay, then add the potatoes, eggs and bacon, let simmer for about 30 minutes, stirring occasionally so it doesn't stick. Serve hot, enjoy.
