2 medium zucchini
1 can of Tomatoes and Green Chilies
1 cup shredded cheddar cheese
1 cup butter crackers, crushed

Directions:
Directions:
1. Wash zucchini; do not peel unless the skin is hard.
2. Slice zucchini into very thin crosswise slices.
3. Put zucchini slices into a butter casserole dish and add the cheddar cheese and tomatoes.
4. Stir to mix up the ingredients, adding salt and pepper.
5. Cover the top with the buttered cracker crumbs.
6. Bake in a 350º degree oven until vegetables are tender.
