3 russet potatoes, peeled & diced 1/2 small onion 3 egg whites 1/2 t baking powder
Place potatoes & onion in blender or food processor. Process until coarsely pureed. Add egg whites & baking powder to potato mixture. Blend. Using a non-stick muffin pan, add 1/3 c of potato mixture with paprika. Place in 400º oven and bake 20 minutes. Lower heat to 350º and continue baking until lightly browned - about 20 minutes more.
