1 med. onion chopped
1/2 - 1 c unsalted tomato juice
1/4 t black pepper or cayenne, to taste
2 c potatoes, cubed
2 c green beans
1 can (16 oz) unsalted tomatoes or 2 c fresh tomatoes
2 T water
3/4 t ground cumin
2 c carrots, lg chunks
2 t oil

Simmer onions in oil & water until transparent. Add potatoes & carrots & simmer 15 minutes stirring occasionally. Add chopped tomatoes & cumin. Cover & simmer for about 1 hour, checking to see if the stew needs more liquid. If so, add tomato juice, add green beans and cook for 15 minutes more. Check seasoning - add 1/4 t or more of black pepper and more cumin if desired.
