Brown Sugar Rolls/Kolaches Recipe

Ingredients: 2 c. milk 1/2 c. lard 1 egg 1/2 tbsp. salt 1/8 c. sugar yeast - 1 packet or 1 small cake 5 c. flour

Directions:Heat milk till scalding. Add lard, salt, egg and sugar to milk. Cool before adding yeast. Use a small amount of sugar (from 1/8 cup) to help dissolve yeast in 1/2 c. water. Add flour.
Knead till blisters form and dough holds its shape. Put in warm place to rise (no breeze) and cover with a towel. It should double in size. Let dough rise for approximately 1 1/2 to 2 hours.
Divide dough in half.
For Brown Sugar Rolls - Spread flour on breadboard. Knead slightly and press into a rectangle (size of an 8 x 8 pan). Spread butter over top of rectangle. Put a layer of brown sugar on top. (Butter and B Sugar to taste) Roll dough into a log and cut 2 inch pieces. Place cut side done in grease 8 x 8 pan. Let dough raise again (till it reaches top of pan) Bake at 400º till brown on top. Frosting is optional!
For Kolaches - Use second half of dough. Spread flour on breadboard. Knead slightly and cut and roll into ball shape (size of golf ball) and place on grease cookie sheet. Let raise again and then gently push down into center and place a 1-2 teaspoons your favorite of filling (jams, jelly, canned pie fillings etc). Let raise again slightly and bake at 400 degrees for 15 minutes. |
