2 cans apple pie filling
2 tbsp. butter
1 tsp. cinnamon
3 eggs
1/2 cup milk
1/2 cup all purpose flour
1 tbsp. sour cream
1 tsp. lemon zest
1/4 tsp. salt
confectioners sugar

Directions:
Directions:
Preheat oven to 350º. In 10" cast iron skillet warm pie filling, butter, cinnamon. In a bowl beat the eggs until frothy. Add milk, flour sour cream, lemon zest and salt. Beat just until smooth. Pour over hot apple mixture in skillet, and immediately put pan in the oven. Bake for 20-25 min. or until the pancake is puffed up and golden brown. lightly dust with sugar.
