1 1/2 lb. sweet potato 2 eggs 3 T. unsalted butter 2 T. maple syrup 1 tsp. salt 1/2 tsp. cinnamon 1/2 tsp. ginger Pinch nutmeg Pinch pepper 1/4 cup roasted pecans
Preheat oven to 400°F. 1. Pierce potatoes and bake until soft. 2. Decrease oven to 350ºF. 3. Mash potatoes and add all ingredients except pecans. Bake in buttered 8 x 8" casserole dish for 30 minutes. Top with roasted pecans.
