3 c. sifted all-purpose flour
1 1/2 tsp. baking soda
1 1/2 tsp. salt
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
1/2 tsp. allspice
1/4 tsp. ground cloves
3/4 c. shortening
1 1/8 c. firmly packed light brown sugar (= 1 c. + 2 T.)
3 eggs
1 1/2 tsp. vanilla
1 1/2 c. grated raw apples
3 T. cider vinegar plus water to make 3/4 c.
Optional: 3/4 c. chopped walnuts

Mix and sift flour, baking soda, salt and spices together. Cream shortening and sugar. Add eggs one at a time, beating well after each addition. Add vanilla. Stir in flour mixture, alternating with grated apple and liquid. Stir in walnuts. Turn into a
greased loaf pan, 11 1/4" x 4 1/4" x 2 1/2" or 2 small loaf pans. Bake at 350 for 75 minutes or until done. Cool on wire rack.

John brought this recipe home in the 5th grade. We made it together and it was delicious. I still have the original lined school paper recipe with ingredient spills and all!
