2 c. cooked chickpeas
1 tomato, diced
1/2 medium green pepper, diced
1 small onion, finely chopped
1 clove garlic, minced
1 tbsp. chopped fresh parsley
2 tbsp. olive oil
1 lemon - juiced

Directions:
Directions:
Boil chickpeas (garbanzo beans) in water until soft. Drain. In a bowl, toss together all ingredients. Cover and chill.
Serves 4

I cook the whole bag of chickpeas and then freeze the remaining 2 cups in bags.
