42 oz. tomato paste
15 oz. tomato sauce
1/2 medium sized onion, chopped
2 to 3 garlic cloves, chopped
1/4 c. extra virgin olive oil
1/2 lb. roast
1 tsp. dried basil
2 T. dried parsley
1/2 T. dried oregano
2 bay leaves
Salt and pepper
Crushed red pepper, optional

1. Heat olive oil in 8 quart sauce pot over medium heat and add onion and garlic. Cook until transparent.
2. Add roast and season with salt and pepper. Brown on all sides.
3. Add tomato paste and cook for a few minutes. Add tomato sauce.
4. Fill the pot with water until the pot is 3/4 full. Add dry ingredients and reduce heat. Let sauce come to a slow boil.
5. Simmer 3 to 4 hours. Add meatballs and let simmer another hour.
