Spray a 9 X 13 pan with non-stick cooking spray
Unroll one package of rolls to line bottom of pan.
Layer meats and cheeses alternately (e.g, 1st layer ham, 2nd layer Swiss, etc.)
Layer peppers on top (if you dont use garlic & oil peppers I sprinkle a little olive oil and garlic powder on)
Pour beaten eggs evenly over all.
Unroll other package of rolls to cover top.
Brush with yolk.
Bake in pre-heated over at 350 degrees for 30 minutes, uncovered, and 30 minutes, covered. If necessary, uncover to brown up the top at the end for a few minutes.
Cool slightly and serve cut into 24 squares.
