1 medium onion, chopped
1 medium green pepper, chopped
1 c. celery, sliced
2 cloves garlic, minced
2 T. butter
1 lb. chicken breasts
1 1/2 c. okra, sliced
2 cups tomato, chopped
2 bay leaves
1/2 tsp. thyme
1/2 tsp. oregano
1/4 tsp. Tabasco sauce
1 tsp. salt
3 cups water
1 c. uncooked rice
8 oz. spicy sausage, sliced 1/4 inch thick

1. Saute onion, green pepper, celery and garlic in butter in heavy saucepan until tender.
2. Rinse chicken and pat dry. Chop into bite-sized pieces.
3. Add chicken, okra, tomatoes, bay leaves, thyme, oregano, Tabasco sauce and salt to saucepan; mix well.
4. Cook over medium heat for 10 to 15 minutes or until chicken is cooked through. Add water or rice. Bring to a boil; reduce heat. Simmer, covered, for 15 minutes.
5. Add sausage, cook 10 minutes longer. Remove bay leaves.
