2 (10-oz) packages chopped spinach
3 cups herb stuffing mix
1 large onion, chopped fine
1/2 cup Parmesan cheese (grated)
1 tablespoon white pepper
6 eggs, beaten
3/4 cup melted butter
1-1/2 teaspoon garlic salt/powder
1/2 teaspoon thyme

Directions:
Cook spinach per directions, drain well. Squeeze to remove excess moisture. Combine spinach with all ingredients; mix well. Shape into 3/4 inch balls. Place on lightly greased cookie sheet. Bake at 325 for 15-20 minutes. Serve hot or cold. May freeze before cooking.
