1 c. bulgur
water
1 bunch parsley, stems removed,
1 bunch watercress, chopped
rinsed, chopped (about 1 c.)
(about 1/2 c.)
1/4 c. minced fresh mint or 1 T. dried
1/2 c. chopped green onions
2 tomatoes, seeded and diced
1 cucumber, seeded, diced
1 green pepper, seeded, diced
1/2 c. chopped black olives
1/2 c. each olive oil, fresh lemon juice
salt, freshly ground pepper to taste

Directions:
Directions:
Soak bulgur in water to cover for 1 hour. Drain off excess water. Put in large bowl; add parsley, watercress, mint onions, tomatoes, cucumber, green pepper and olives; toss. Mix oil, lemon juice, salt and pepper. Pour over salad. Toss to coat. Serve at room temperature.
