16 oz can black beans,
1 c. diced roasted red bell pepper
rinsed and drained
1/2 c. cooked corn kernels
1 red onion, finely chopped
1/2 c. cilantro
4 scallions, thinly sliced
1 jalapeņo pepper seeded,
4 tsp. fresh lime juice
deveined and chopped
4 tsp. olive oil
2 garlic cloves, finely chopped
salt and freshly ground pepper
