2 large ears of fresh yellow corn, peeled and silk removed.
2 large Creole or other vine-ripened tomatoes, cored and cut into 3/4 inch dice (about 2 cups)
2 avocados (14 ounces), peeled seeded and cut into 1/2 dice @ 2 cups
6 T finely chopped red onions
2 T chopped fresh parsley leaves
2 T extra-virgin olive oil
2 T fresh lemon juice
1 tsp salt
1/4 tsp freshly ground white pepper

Cook corn. Drain and cool. Cut kernels from ear and place in bowl. Add tomatoes, avocados, onions, parsley, olive oil, and lemon juice.Toss to combine.
