"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Ingredients:
Ingredients:
9 pound corned beef
1/4 cup pickling spices
3-4 cloves of garlic
2 cups brown sugar
orange juice
2 teaspoons dry mustard

Directions:
Directions:
Cook a Corned Beef in water until it boils, about 15 minutes. Remove the water from pan and add all fresh water. Then add 1/2 jar of pickling spices and cloves of garlic. Cook for 2 & 1/2 to 3 hours.

Remove from pot, and let cool. Trim away as much of the top fat as you can. Combine two cups of brown sugar with as much orange juice as you need to make a thick paste, add two teaspoons of dry mustard. Smear over the entire top of corned beef, and put in a 375 oven until it browns and glazes meat. Remove from pan, and serve, cutting the meat across the grain.

Personal Notes:
Usually for a big crowd, I make one of about
9 lbs, and split it so that the pot can hold it.
