Marinate 4 chicken breast in:

1/2 c Mango m (mango juice is ok)
1/4 c Cilantro
2 tsp vegetable oil
1/2 tsp salt
1/2 tsp cumin


Salsa:

1 Mango peeled and diced
1 can of Black Beans
1/2 cup chopped tomatoes
2 thin green onions
2 Tbs Cilantro-chopped
1 1/2 tsp red-wine vinegar
1/2 tsp salt

Prepare marinade. Marinate the chicken for 30 min to a few hours? then grill it or cook it in a pan. Meanwhile prepare the salsa. I put some brown rice on my plate, slice some grilled chicken over the rice and then cover it with lots of salsa. So good and so healthy!

Anyone who eats this always raves about it! It is relatively simple yet extremely healthy and it taste' fabulous! This has become sort of a staple around my home. Whenever the mango on my counter is perfectly ripe I know its time to make this meal again! I squeeze the mango seed in my hand when I've taken off the flesh to add more juice.
