1 c. sugar
1 c. packed brown sugar
1 c. butter
2 eggs
1 tsp. vanilla
2 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1 c. rolled oats
1 c. coconut

Directions:
Directions:
Cream butter and sugars until light. Mix in eggs and vanilla and beat until fluffy. Blend flour, soda, and salt, then stir into butter mixture. Blend in oats and coconut. Dough will be soft. Spoon onto cookie sheets. Bake at 375º for 8 minutes for soft cookies, 9-10 minutes for "crispies". Remove from pan and cool on cooling rack.

This was my great aunt Deleen's recipe. I always double this recipe because it is our family's favorite. David likes it with raisins, (like oatmeal raisin cookies), but the rest of us like it simple, so I bake half the batch, then add raisins to the rest of the cookie dough.
