2 1/2 cups flour
3/4 tsp. salt
2 tsp. cinnamon
2 tsp. baking soda
2 eggs
2 cups sugar
1 tsp. vanilla
1/2 cup raisins - optional
1 cup nuts, chopped
1/2 cup oil
4 cups chopped apples

Directions:
Directions:
Preheat oven to 325º.
Mix eggs, apples, sugar, vanilla, and oil and stir well. Mix flour, salt, cinnamon and baking soda and add to apples. Add nuts and raisins, if using. Bake in greased 9x13 pan for 1 hour 15 minutes.
