3 egg yolks
1 whole egg
1/2 teaspoon salt
1/4 cup powdered sugar
1 tablespoon rum flavoring
1 teaspoon vanilla
1 cup flour
2 inches of vegetable oil in pan

Directions:
Directions:
Beat the egg yolks, egg and salt until very stiff. This will take about 15 minutes. Blend in the powdered sugar, rum and vanilla flavorings. Add flour all at once and mix well. Knead dough until it has a blistered appearance, about 15 minutes. Divide dough in half and then roll out each half until paper thin. The thinner the better. Cut the dough with pastry or pizza cutter about 3 inches long and the width about 1 1/2 inch. Cut a one-inch slit in the center of each strip. Pull the long end of the strip through the slit. Fry in the hot oil (375 degrees) until lightly brown and crisp. This will only take about 30 seconds and then turn and fry the other side. Drain on paper towels. Sprinkle with powdered sugar, flavored with vanilla or rum. Yield: 3 dozen cookies.
